Ribeiro Santo – The Encruzado White Wine is born at an altitude of around 400‑600 metres, on granitic soils with large rocky outcrops, influenced by the Dão and Mondego rivers. The grapes, exclusively of the Encruzado variety, were hand‑picked in the second week of September into small 18‑kg crates, following a meticulous selection of the best fruit from the vineyard. Vinification and ageing: hand‑harvest from a single Encruzado vine at Quinta do Ribeiro Santo. Total de‑picking and pressing. Selection of the juice, cooling and low‑temperature settling for 24 h. Fermentation in stainless‑steel tanks at about 15 °C for 20 days. Fifty percent of the wine finishes fermentation in new French oak barrels. Winemaker: Carlos Lucas.
