Roquette & Cazes “An exceptional wine that I am proud to produce in the wonderful demarcated region of the Douro, where the ancestral winemaking wisdom of the Cazes family meets our knowledge of this land. The result is unique.” – Jorge Roquette The vineyards, with an average age of 35 years, are planted on two tiers of terraces. All grapes are hand‑picked and come exclusively from the Cima Corgo and Douro Superior sub‑regions. After a meticulous selection at the winery entrance, the grapes are destemmed, gently crushed, and transferred to stainless‑steel, troncoconic fermentation tanks where the controlled‑temperature alcoholic fermentation begins. During fermentation the French “delestage” technique is employed to increase the skin contact surface as the must/wine laps over the lees. The result is a concentrated, complex wine that remains elegant and engaging. Aging: Xisto Roquette & Cazes 2019 spent 100 % in new French oak barrels for 20 months. Decant beforehand. Serve the Xisto – Roquette & Cazes wine at 16 °C, pairing it with all kinds of meat dishes, game, and other well‑seasoned fare.
