This Sarmentinho is a delightfully thoughtful wine – it seems to have spent a rather contemplative adolescence! The cool maceration, expertly managed between 6 and 8 hours, hints at a certain restraint, while the slow, 14°C fermentation over 18 days ensures those delicate aromas from the Moscatel and Fernão Pires grapes have ample time to fully blossom. Absolutely perfect with some fresh seafood, perhaps a rich arroz de marisco – it’ll really bring out the wine’s complexities.
