This Stanley Pinot certainly seems to have travelled a long way, bringing with it the sophistication you’d expect from a Champagne. That lovely mousse is immediately apparent, and the persistence of the bubbles is genuinely impressive. A classic Pinot Noir elegance blended with the freshness of Chardonnay – a sparkling wine that’s well worth ageing, of course, and ideally paired with seafood or ceviche to really bring out its complexities.
