Terroir Sense Fronteres Guix Vermell Negre 2021 is a red wine aged in clay, crafted from Garnacha Tinta in the Montsant DO (Catalonia). A lover of Priorat, Dominik Huber sought to revive a winemaking style where the grape, terroir, and climate are the true protagonists. It’s a return to the old way of doing things; Huber happened to buy a vineyard when acquiring a plot in neighbouring Montsant, realizing he could produce his wines with fewer restrictions, achieving greater freshness and lightness. This is how his four Terroir Sense Fronteres wines are made. In the cellar, the Terroir Sense Fronteres Guix Vermell Negre grapes are left whole, ungrafted. Fermentation occurs spontaneously with native yeasts in terracotta vessels. Maceration lasts 7‑8 days, after which the wine ages in these clay jars for about six months. Inspired by gypsum (guix) and red clay (vermell) soils, the wine is vinified following Burgundy’s ancient traditions to capture the maximum expression of the terroir. It is a fresh, smooth wine with powerful elegance.
