This Dão wine, crafted from the traditional Encruzado, Bical, and Cercial Branco grapes, offers a fascinating glimpse into the unpredictable nature of the Serra da Estrela mountains. A generous 2020 rainfall, coupled with a surprisingly warm February that triggered early budburst, initially suggested an early harvest – but those benign spring frosts limited yields. The outcome is a remarkably fresh and elegant wine, with a slightly less pronounced fruit profile, expertly balanced by a pronounced granite minerality, much appreciated by Jancis Robinson (17/20). It’s a superb pairing with grilled fish or a particularly indulgent poultry dish.
