These 25‑plus‑year‑old vines thrive on granite soils and are managed sustainably, with no herbicides used. The vineyard has been in transition to organic certification since 2020. **Vinification and Maturation** After pressing, the must was statically decanted for 48 hours. Fermentation took place in 225‑liter French oak barrels that had been previously used. The wine then aged for 11 months on the whole lees without bâtonnage.
