This Tojeira Pinot Noir Rosé, born on the slopes of the Basto, is a delightfully disobedient blush – as if the dawn itself came to visit. The nose reveals a mischievous burst of red berries, complemented by a floral note hinting at the freshness of the Peneda-Gerês National Park, where the Tojeira estate – a 17th-century mansion with 20 hectares of vineyard – is nestled. On the palate, the wine’s vibrant acidity is beautifully balanced by a velvety finish, practically begging for another sip – particularly delicious with grilled fish, or, if you’ll indulge me, a perfectly executed salmon.
