This monovarietal Parellada — the finest and most delicate of Catalonia’s traditional white varieties — comes from the producer’s own vineyards in Pacs del Penedès, where a Mediterranean microclimate allows a slow maturation. Enjoy it very fresh, paired with shellfish or fish in sauce, and it’s suitable for vegans.
