This Sancerre from Vacheron’s “Le Paradis” is clearly the result of a very patient approach – and perhaps a little bit of producer pride in the Sauvignon Blanc. Hand-harvested in 20kg boxes and gently pressed, it suggests a genuine respect for the grapes and a desire to unlock maximum elegance. The 35hl oak ageing adds a welcome layer of complexity, though thankfully doesn’t compromise the signature freshness of the Sauvignon. Vacheron is predicting a 10-year ageing potential – a fantastic match for oysters or a delicate white meat dish, wouldn’t you say?
