Vallado The Vallado Lady Baga red wine originates from the Upper Douro in the sub-region that has the lowest vineyard density, largely because of the difficult access in the past and the shortage of labor. Today, however, it is regarded as one of the most promising “terroirs” in the Douro. The grapes come from Quinta do Orgal in Castelo Melhor – Vila Nova de Foz Côa, where 35 hectares of vineyards are planted and organic agriculture is practiced. **Vinification:** All grapes are 100 % from a north‑facing vineyard at Quinta do Orgal in the Upper Douro, with biologically certified vinification. To achieve a gentle extraction, 20 % of the grapes were used whole bunches (not destemmed) and the remaining 80 % were left whole (intact stems). After a 24‑hour cold maceration, the grapes fermented for one week with very low extraction. **Stage:** Immediately after alcoholic fermentation, the wine was transferred to 225‑liter French oak barrels where malolactic fermentation took place and the wine remained for about 12 months. **Allergen information:** Contains sulfites.
