This Tavel is clearly the result of meticulous planning – a touch of “saignee” certainly adds a dramatic flourish. The early harvest, at the start of September, points to a deliberate effort to maintain freshness, while the Grenache’s “saignee” technique promises a wine brimming with vibrant acidity. Careful, steel fermentation and regular batonnage, patiently employed for four months, suggest the producer isn’t in any rush to sacrifice complexity. Remarkably, a three-month bottle aging seems to have been a masterclass in restraint – a well-kept secret. Perfect with grilled fish and the exuberance of a summer’s evening, naturally.
