Villa Maria The vineyard blocks from the warmest part of the Wairau Valley are chosen to showcase concentrated, ripe tropical notes of Sauvignon Blanc, while the cooler Awatere Valley takes longer to mature, yielding dominant herbaceous and bell‑pepper flavours. The Sauvignon Blanc grapes destined for this Cellar Selection were harvested at cool night temperatures to preserve aromatics. The clear juice is slowly fermented in stainless‑steel tanks using selected aromatic yeast strains. The wine is aged on lees for a period to add weight and texture to the palate, without compromising its freshness.
