Quinta de S. Francisco The vineyard where the grapes for this wine are planted boasts excellent edapho‑climatic conditions. Located at the confluence of two rivers and sheltered by the riverbanks’ slopes, it generates high humidity at night and a greenhouse‑like effect during the day, creating ideal conditions for Botrytis cinerea to thrive. Weekly, clusters were sampled from various spots for physico‑chemical analysis and organoleptic testing to pinpoint the harvest timing. On 20 October, a team of specialists hand‑picked only the berries showing noble rot symptoms. After stopping alcoholic fermentation and stabilising the wine, 40 % was aged for about two years in used French oak barrels.
