This Villa Oliveira, from Casa da Passarella, is a delightfully wistful tribute to a Dão that once was. The Encruzado grapes, meticulously hand-picked, burst forth with a vibrant citrus character, reminiscent of lychee and lending a beautiful floral nuance – a testament to the indigenous yeasts that coaxed the best from them. The extended lees aging – a full nine months with battonage – has bestowed it with a generous body and refreshing balance, all executed with exquisite elegance. A limited run of just 2000 bottles, it pairs beautifully with grilled fish or roasted chicken.
