The grapes are hand‑picked and split twice. They are lightly pressed in a low‑pressure pneumatic press to achieve a slow extraction. After a gentle must extraction, the wine is transferred to 228‑litre French oak barrels (25 % new oak) for alcoholic and malolactic fermentation with wild yeasts for 16 months. The wine is then transferred to stainless steel for blending. A complex wine that combines powerful, mineral aromas.
