This volcanic rosé is a testament to nature’s power, harvested with a truly Herculean effort – those 40kg bunches aren’t going to pick themselves! Careful hand-sorting followed by gentle pressing, all without the aid of pumps, is clearly done to coax out the very soul of the grapes. A short maceration, just 3-6 hours at 12°C, allows the Merlot, Syrah, Castelão, Aragonez and Touriga Nacional to fully express their aromatic potential. Absolutely perfect with a grilled fish or a seafood salad, wouldn’t you agree?
