“This Vinhas Velhas from the Douro clearly benefited from meticulous planning – a weather consultant apparently had a hand in the harvest. Following a gentle pressing with a pneumatic press, the must was chilled for 24 hours in the Quinta de Vale D. Maria’s cool cellar. The slow, 25+ day fermentation, held at a cool 10-14°C in a French oak vessel, undoubtedly imparted nuance. A careful battonage ensured a refined character, making it a superb match for white fish or ceviche, no doubt.”
