This Xarel·lo monovarietal, sourced from vines over 65 years old, ferments for four months in chestnut barrels to preserve as much of the varietal character as possible. It then undergoes a lengthy two‑year bottle maturation before release. It displays a very mineral, wild aroma with hints of peach, wild plum, and apple, and on the palate is broad with a spicy finish.
