This Xisto DOC Douro appears to have had a slightly turbulent youth – a surprise result nonetheless. Following a rather deliberate grape crushing, the must rested, attempting to temper the assertiveness of the Gouveio and Arinto grapes. A year in French oak barrels, with the lees contributing complexity, followed by six months in stainless steel, ensured the acidity wouldn’t slip away. The result is a fresh white wine with notes of white fruit and a mineral touch, ideally paired with grilled fish or seafood.
