Xisto In the Douro region, where a great diversity of grape varieties is planted across various landforms—terraces, slopes, plateaus, highlands—the shale is the common denominator. This is the starting point for Xisto Ilimitado, a pursuit that seeks to express the different nuances of various plots in the Mêda area that share mica‑shale soils, high altitude, and a predominance of the Rabigato grape. The grapes were crushed and destemmed before pressing, without any prior maceration. The resulting must was decanted at low temperature for 24–48 hours. Fermentation with indigenous yeasts took place in 500‑ and 228‑liter barrels, with 30% of the wine fermenting and ageing in stainless‑steel tanks.
