Port wine, a quality Tawny that celebrates the 650th anniversary of the Treaty of Windsor. Until about 1756, the production of “shipping wines,” as Port wines were then called, followed the so‑called “old process” of winemaking. Fortification, always in small quantities, took place only after fermentation was complete, resulting in dry wines. In 1820 the modern fortification process emerged, halting fermentation to produce sweet wines. This method only became widespread in 1852, by which time Port wines began to resemble their current styles. Thus, Port wine is a fortified wine produced in the Demarcated Region of the Douro under unique conditions stemming from natural and human factors. The traditional production process includes stopping the must’s fermentation by adding grape spirit, blending wines, and then ageing. Port wines are divided into different categories according to ageing style, ranging from Ruby, Tawny, White and Rosé. The bottling year may not match the image shown (illustrative only).
