This Caíño is the definition of verticality in a wine. It is found within those 0.8% of Galician reds. Everything else is white. Of the three grape varieties that make up the Galician red trilogy O Esteiro, to which it belongs, this is the one that stands out the most for its acidity and its sensitivity to botrytis. It requires more care than any other. Thus is this O Esteiro Caíño, a pampered red, with herbaceous, forest, and eucalyptus notes. Extremely fresh and ideal for pairing with fatty meats, but it will also benefit greatly from a period of bottle aging.
