BiniVista This wine is named in honour of the Serra de Alfabia, a secondary mountain range situated in the Serra de Tramontana. Standing at 1,067 metres, Alfabia is one of the highest peaks in Majorca. With its distinctive antenna-like ridges, Alfabia is a clear landmark on the island, just as this wine is for us. A powerful blend of the classic grapes Merlot and Syrah, it boasts as much personality as the mountain itself. **Vinification**: Alfabia was born during one of the first barrel trials in early summer 2022. Something so fascinating about six of our Merlot barrels compelled us to craft a wine around them! After many tests, we added a touch of Syrah to give the wine a dark, wild soul and added structure, and it worked wonderfully. At bottling time we added a small splash of a Syrah and Cabernet blend we keep in a barrel. **Oak barrel stage**: October 2021 – October 2022. **Bottling**: November 2022. **Launch**: December 2022. This wine pairs beautifully with lively, refreshing dishes. It’s perfect for moments when you’re hungry, happy, or simply feel the need to celebrate. Delightful with duck breast rubbed in ras el hanout and fried until the skin is crisp while remaining red inside; serve alongside a spinach, pomegranate, and walnut salad with a sauce of aged balsamic vinegar, honey, and the finest olive oil you can find.
