Made from sun-dried Pedro Ximénez grapes, it delivers a powerfully dark fruit intensity, alongside caramel notes that seem to hail from another dimension. The addition of vínica brandy adds remarkable complexity, and the complete absence of filtration or SO2 ensures a purity of flavour that’s a genuine provocation for the industry. Seriously, this needs a generous slab of Iberian ham and Manchego cheese – don’t even think about anything else.
