Borges A complex and sophisticated wine that mirrors Borges’ more than 135 years of experience. Vinification: The grapes are fully destemmed followed by gentle crushing. Part of the batch is initially vinified using the traditional foot‑pressing method, finishing fermentation in stainless‑steel tanks, while the remaining batch is vinified solely in stainless‑steel tanks. In both processes a brief pre‑fermentative maceration is carried out, followed by fermentation over 6–8 days at a controlled 28–30 °C with relatively frequent punch‑downs. After alcoholic fermentation a maceration period is performed, after which the wine is separated from the solids it fermented with. The entire wine ages in French oak barrels for 18 months. Bottling: Processed under inert atmosphere with total deoxygenation of the bottle. Allergen information Contains sulfites. SKU: 101067
