Duorum Vinification: The grapes from the vineyards, most of which are very old—around 100 years—undergo sorting/selection upon arrival at the cellar. The selected bunches are then destemmed. A low‑temperature pre‑fermentation maceration follows, using robotic crushing in stainless‑steel tanks. They are then moved to stainless‑steel vats with a controlled temperature between 25 °C and 28 °C, where alcoholic fermentation is completed. During this stage, the usual remontage and “delestage” operations are carried out to achieve rigorously selective extraction, limited to the desired constituents. Vinification concludes with post‑fermentation maceration. The skins remain in contact with the must for up to a maximum of 18 days. Stage: In French oak barrels of 225 and 300 litres for a period of about 18 months, depending on each batch and grape variety. Using 70 % new oak barrels and 30 % oak from the second and third years.
