The degorgement was carried out in 2025. This process involves freezing the neck of the bottle to remove the lees, which result from the second fermentation of the wine already in the bottle, following the Traditional Method of sparkling wine production. Made from grapes grown in the vineyards of Tenuta Montenisa, it is the result of selecting the best Chardonnay grapes, together with a small percentage of Pinot Blanc. The result is an elegant cuvée with refined freshness. It displays a pale yellow colour, creamy mousse and a fine, long bubble. The nose, fragrant and distinctive, is characterised by pleasant floral and fruit notes, such as apple and white peach. The palate is vibrant and fresh, with good balance and great elegance. The Antinori family has been making wine for over six hundred years. Since 1385, Giovanni di Piero Antinori became a member of the Arte Fiorentina dei Vinattieri. Over its long history, spanning 26 generations, the family has always managed the activity directly, making innovative and sometimes bold choices while maintaining an unwavering respect for tradition and territory. Tenuta Montenisa is located in the heart of Franciacorta, near the village of Calino, the crown jewel of this sweet part of Italy, where ancient palaces, convents, abbeys and churches scattered across green hills and brown valleys have witnessed centuries of history.
