The hand-picked grapes, selected just as the stream water recedes, speaks volumes about their dedication to quality, much like the use of Viognia and Touriga Nacional. Fermentation in rotating barrels, with careful temperature control, undoubtedly adds to its smoothness, and the inclusion of cold stabilization – well, let’s just say the producer clearly values the wine's potential longevity. I’d recommend pairing it with some aged sheep’s cheese.”
