Herdade dos Grous The Arinto grapes that make up this wine were hand‑picked, showcasing an exceptional quality that foreshadows a wine with great potential. Wines from Herdade dos Grous possess a strong personality, reflecting the distinctive character of their terroir. They are marked by freshness and the honesty of their fruit, and the white wines offer a rich aromatic profile. Vinification: The grapes were kept overnight in a 8 °C cold room. After this period a manual selection of the fruit takes place before complete destemming, followed by a gentle pressing of fresh grapes. The must is allowed to settle at low temperature for two days. Fermentation occurs in a concrete vat, where the wine ages for six months “sur lie” with periodic “batonnage”. The choice of this vat was driven by its thermal stability, preservation of the wine’s natural and neutral characteristics, and the maximization of thermal inertia thanks to its spherical shape.
