This Immortelle is a rather bold venture. Those five weeks of open maceration clearly allow the Syrah and Grenache to revel in the Mediterranean climate and a soil composition – chalk, granite, and schist – that’s frankly, quite difficult to pin down. The aging on spent Château Margaux barrels, only a year old, adds a touch of… well, let’s call it refinement, though perhaps leaning a little towards self-conscious elegance. Anticipated to age beautifully for 15-20 years, this wine should be a sophisticated partner to red meats, or even a particularly good sheep’s cheese. It makes promises, and it certainly deserves to be enjoyed.
