This Oloroso Dulce Sherry is a wonderfully bold experiment, blending Palomino Fino with the intense Pedro Ximénez. The Palomino Fino undergoes careful fermentation in stainless steel, yielding a richly flavoured spirit that’s then perfected by sun-dried Pedro Ximénez – a ‘passa’ style – adding layers of spice and dried fruit. It’s a substantial, sweet wine, ideal with aged cheeses or, if you’re feeling decadent, a dark chocolate brownie.
