Monsieur de Florensac is made from a carefully selected Cabernet Sauvignon grape sourced from clay‑sandy soils and produced using the traditional “cocotte” winemaking process. The term “cocotte” means that fermentations are carried out separately in stainless‑steel vats, sacrificing the latest batch when the two are combined. The grape maceration is controlled for 45 days, without chemical intervention, yielding an astonishingly complex style of Cabernet Sauvignon. A group of viticulturists united by the same passion created the Vignerons de Florensac, based in the Languedoc region and covering 670 hectares near the Mediterranean Sea, bounded by the Étang de Thau. The soil is characterised northward by a vast plateau of clay and limestone, and southward by a plain mainly of sand deposits. The Mediterranean and lake influence provide a very favourable temperate climate for aroma development, limiting diurnal temperature swings during the very dry summer. The vines are cultivated and maintained with an ecological approach, with about 50 hectares already officially integrated into organic agriculture.
