This sparkling wine from Mariana Rocim, born in the heart of Vidigueira, is a testament to the rewards of patience and exceptional terroir – think granitic and schistous soils, blessed with a wonderfully temperate microclimate as the producer describes it. The secondary fermentation in the bottle, followed by disgorgement after nine months on the lees, delivers a remarkable complexity and effervescence. With a total acidity of just 6.2 g/L and a vibrant volatile acidity of 0.28 g/L, it’s a truly elegant expression of the indigenous grapes, absolutely bursting with flavour and ideally paired with seafood or delicate white fish.
