Moscatel Ermelinda De Freitas is a Moscatel from the Setúbal Peninsula, Portugal, produced by Casa Dona Ermelinda. The winemaking is overseen by Jaime Quendera and Joana Freitas. It is made from the Moscatel de Setúbal grape variety. Winemaking of Moscatel de Setúbal Ermelinda Freitas: Fermentation takes place in temperature-controlled stainless steel lagar-style vats until the must reaches a density of 1080, followed by fortification with 77% grape spirit and extended skin maceration until March of the following year. It is aged for 24 months in half pipes of oak. It shows a golden colour. The aromas evoke honey and orange peel, very typical of the region. On the palate it is full and sweet, revealing good acidity that gives it freshness. It pairs well with fine pastries, Arabic sweets, and as an aperitif. Serve at 14–16 °C. At 17.5% vol., it comes in a 0.75 L bottle. Serve slightly chilled, in a Port or white wine glass, to bring out the aromas of dried fruit and caramel. It pairs perfectly with almond desserts, convent sweets, crème brûlée and aged cheeses, or simply with a good coffee. Store the bottle on its side, in a cool, dark place free from temperature fluctuations. Once opened, reseal it and keep it in the refrigerator to preserve its aromas.
