Dirk Niepoort, ever the meticulous craftsman, employed a careful approach – hand-picked grapes, gentle pressing, extended decantation, and fermentation in new French oak barrels, giving it a subtle flinty character and notes of dried fruits. The acidity is firm, the finish complex and subtly saline, perfectly suited to be enjoyed in a Burgundy-style glass, just as Dirk himself would suggest.
