Vinification: The grapes are pressed and the must is decanted for 2–3 days at 10 °C. After clarification, fermentation takes place at 14 °C for 3–4 weeks. At the end of fermentation, the wine is separated from the heavier lees and will age in stainless‑steel tanks until bottling. Until the end of December, the finer lees will be lifted once a week (batonnage). Suggestions: Pairs well with appetizers, shellfish and grilled fish. Store lying down, in a cool, dry place, protected from light and temperature swings. Serve at 8–9 °C. Consume in moderation.
