Quinta da Fonte Souto – The Wine Situated on the slopes of the Serra de São Mamede Natural Park, near Portalegre, the Fonte Souto vineyards—planted between 490 and 550 m above sea level—benefit from cooler and more humid conditions than the hot Alentejo plains. The transitional soils between schist and granite, dominated by schist, provide an ideal balance between good water retention and efficient drainage. The wines express the freshness and balance that come from the higher elevations, as well as the structure and complexity that result from mature vines with low yields. **Vinification** The grapes are harvested into small baskets and received in the estate’s cellar. After manual sorting comes destemming and gentle crushing, after which the grapes are transferred to fermentation vessels with a peristaltic pump. Each fermentation is monitored individually, and temperatures and maceration movements are adjusted to maximize the potential of the fruit.
