**Quinta da Pedra Escrita** Quinta da Pedra Escrita is located in Freixo de Numão, in the Upper Douro, at an average altitude of 575 m. The dry, arid soils are predominantly granite and sandy, and very poor in nutrients, giving rise to wines with an extraordinary level of aromatic complexity and long-lived character, just as they once did. This is a tradition we want to bring back to a world of increasingly stereotyped wines, one that captures the unique character of high‑altitude white wines from the Douro. **Winemaking** The harvest is hand‑picked into small 15‑kg perforated crates. Fermentation is carried out with cool‑temperature technology in a reductive environment, with temperatures controlled at around 16 °C. The grapes are pressed without crushing and without destemming under an inert atmosphere to preserve all of their aromatic potential. The entire wine ferments in used French oak barrels, where it remains after a small racking over fine lees with periodic agitation (“batonnage”) until the final batch is completed at the end of spring.
