A raspberry hue that persists amid the release of a white foam upon opening the bottle. The nose of the PET NAT is irreverent and daring. The fermentation process is carried out naturally, without artifices, giving the word to Mother Nature, resulting in irreverent aromas from the fermentation. With the necessary “breathing” time of any living being—such as wine—bold aromas of a natural wine emerge: slightly macerated red fruits and mineral notes. On the palate, fruity notes are detected along with an acidic nerve that continually “refreshes” the level of the natural sugars present, which diminish over the course of the ongoing natural fermentation inside the bottle. Conversely, the “pétillance” resurges when the glass is shaken, releasing more foam, which confirms the wine’s “life.”
