Quinta do Pessegueiro SOLO: Slate CLIMATE: The 2019 vintage was characterised by large temperature swings and annual rainfall below normal, making it a dry year. Occasional rainfall during the harvest period had a very positive impact on maturation. The harvest produced high‑quality, aromatic musts, generally with higher acidity than in previous years. VINIFICATION: Harvest was carried out in September. The grapes were transported in 22‑kg crates to the cellar, where they remained for 12 hours in a refrigerated chamber. Degassing, partial crushing and gravity‑driven flow to a granite press followed, where alcoholic fermentation completed with indigenous yeasts and foot‑pumping. The wine was then transferred to 225‑L vats for malolactic fermentation. Aging took place in the same vats for 12 months. Bottling occurred in May 2021.
