Quinta dos Carvalhais Reserva is a superior quality red wine from the Dão, produced from a selected batch released only in years of exceptional quality. It represents the best of the Dão, blending ancient knowledge with innovation to create wines of great elegance, intensity, and delicacy that reflect the region’s diversity and immense potential. **Vinification** The grapes were harvested by variety and plot and vinified separately. Upon arrival at the cellar, they were unloaded from 20‑kg crates directly into the destemmer‑crusher, falling by gravity into small stainless‑steel vats. Alcoholic fermentation lasted about eight days at an average temperature of 28 °C, with Touriga Nacional undergoing post‑fermentation maceration. **Maturation** After alcoholic fermentation, malolactic fermentation occurred in stainless‑steel vats. The wine then spent 12 months maturing in new and used French oak barrels. It underwent slight settling and filtration before bottling, and was bottled without chill‑stabilisation to preserve its highest quality. SKU: 100797
