This Raríssimo certainly seems to have been a handful – that extended pellicular maceration of four hours hints at a rather bold personality. The blend of new, second-fill and stainless steel barrels brings a lovely balance, though the subtle toast from the French oak adds a welcome layer of complexity, a detail that’s undeniably delightful. It’s a safe bet for a good white fish with lemon rice, wouldn’t you agree?
