Since 1937, Caves do Solar de São Domingos has been producing sparkling wines, aged spirits, bagasse spirit, and Bairrada and Dão wines. Its galleries house more than two million bottles of sparkling wine, thousands of bottled wines, and hundreds of French oak barrels for its renowned wine spirits. The “São Domingos” bagasse spirit, made in its own stills, continues to lead the market with its traditional quality. In 2006 a modern winemaking centre was inaugurated, capable of receiving a thousand tonnes of grapes from the company’s own vineyards and from viticulturists who partner with the firm. Continuous innovation in production and winemaking has elevated the quality and prestige of the house’s wines, reinforcing the competitive edge of the São Domingos brand. Enotourism is also a winning bet, dazzling thousands of visitors each year with the beauty of rock‑cut galleries, the millions of bottles, and the showroom, hall, and museum with a tasting room—all integral to the Bairrada Route.
