The unusually prolonged malolactic fermentation, carried out in the bottle, produces a wine with an astonishingly high acidity – it’s as if the water itself is trying to defy gravity. Bright citrus notes, particularly lemon, intertwine with the evocative aroma of wet stone, hinting at a rocky hillside terroir. With its lightness and a persistent fizz, it’s ideal for a relaxed toast, perhaps alongside some fresh oysters.”
