Soalheiro O Cota 27 is an Alvarinho that springs from the lower slopes of the Monção e Melgaço valley, cultivated on small plots of vineyard beside the Minho River, where the soils are richer in clay. The allure of the mineral character of mountain Alvarinho inspired us to seek the opposite by the river, a profile we explored in the Cave da Inovação. Thus this Vinho Verde DOC is born. **TERROIR** Monção e Melgaço, the northernmost region of Portugal, is shielded by surrounding mountains that create ideal conditions—precise rainfall, temperature, and sunshine hours—for the optimum ripening of Alvarinho. The aim to reflect the territory’s diversity in wines, to push the elasticity of Alvarinho to its limits, results in a continual search for distinctive profiles within the region. Curiosity about vine maturation along the Minho River, where the clay‑rich soils give the grapes a unique flavour, sparked the creation of Cota 27. The distinctive taste of the grapes led us to investigate the reason behind this difference and how we could reflect it in a wine. **VINIFICATION** The grapes are hand‑picked. After crushing and before fermentation, the must is clarified at low temperature. Fermentation begins in a French oak foudre and finishes in 225‑liter French oak barrels and in a stainless‑steel tumbler. In the tumbler natural lees stirring occurs, and in the barrels lees stirring takes place for nine months on the finer lees. The wine undergoes a six‑month bottle maturation. **PAIRING SUGGESTION** This is a very gastronomic wine, ideal to accompany a meal. From grilled prawns, to seafood rice, fish rice or oven‑roasted fish, to dishes of oriental cuisine. **ANALYSIS** Total acidity: 5.2 g/dm³ | Volatile acidity: 0.45 g/dm³ | Residual sugar: dry | pH: 3.43 **Allergen information** Contains sulfites.
