Soalheiro The production of a sparkling wine from the Alvarinho grape demands a meticulous selection of grapes. The must from this selection is fermented at a controlled temperature, yielding the base wine for sparkling. This wine then undergoes a second fermentation in the bottle. The time spent in the cellar, at a low and constant temperature for several months, allows this sparkling wine to showcase the full elegance of the Alvarinho grape. After this fermentation and aging phase, the “degorgement” takes place, an operation that removes the yeast in the bottle and replaces the temporary metal cap with the definitive cork typical of sparkling wines.
