Soalheiro Granit is made from Alvarinho grapes sourced from a specific selection of small plots planted on granite soil, now at about 400 metres above sea level in the Monção e Melgaço sub‑region. The higher the vines, the fruitier side of Alvarinho gives way to notes of acidity and mineralism. The parcels are chosen for their mineral content and lower soil fertility, prompting the Alvarinho roots to sink deeper into the mountain slope to seek nutrients. The name “Granit” is fitting because the wine is highly mineral, with discreet fruit notes and vibrant acidity, revealing a different, unusual dimension of a mountain Alvarinho. Its acidity and elegance bring a sense of water to the palate, making Soalheiro Granit a very gastronomic wine. Vinification: The grapes are hand‑picked. After pressing, the must is clarified before fermentation. Fermentation takes place in stainless steel at a slightly higher temperature than usual for white wines (22 °C), ensuring the fruitiness of the Alvarinho does not mask the delicate mineralism we seek. Bâtonnage and fining on fine lees improve the wine’s structure before bottling. Due to its mineral character and lively acidity, Soalheiro Granit pairs especially well with Mediterranean cuisine: shellfish, grilled fish, roasted fatty fish. It also complements white meats, smoked meats, aged cheese, and delicate Asian dishes such as sushi or dim sum.
