TITAN of Távora‑Varosa Daemon “Sescenti Sexaginta Sex” (666) is a white wine produced from a historic vineyard that has been in continuous cultivation for over 140 years. It is located in the municipality of Sernancelhe, at an altitude of 850 metres. The vineyard spans 0.80 hectares and is planted on granite and quartz soils, with the Cerceal grape variety dominating among the others grown there. **Winemaking** The production process is deliberately simple and low‑intervention. Fresh grapes, harvested at their ideal point of ripeness and hand‑picked into 20‑kg crates, are transported to the winery. They are carefully hand‑picked again, destemmed, and gently crushed—no pressing is performed. The juice is then transferred straight into new French oak barrels, where it undergoes alcoholic fermentation followed by malolactic fermentation. The wine continues to age for an additional 24 months, during which the fine lees are regularly removed and the temperature and humidity are strictly controlled.
