Fresh grapes at their ideal ripeness are hand‑picked into 20 kg barrels and transported to the cellar, where they undergo a meticulous manual selection, de‑stemming, and foot‑treading in a stone press for four hours. The must is then transferred to temperature‑controlled fermentation tanks, where it ferments for ten days. The wine ages for nine months in French oak barrels. It displays a very intense violet color; on the nose it offers mineral notes, fresh fruit (cherry and wild berries), and hints of tobacco leaf and cocoa. In the mouth it is fresh, with silky, assertive tannins. Pair it with regional dishes (oven‑roasted meats, traditional sausages, game), cheeses, dried fruits, and compotes. Contains sulfites.
